Happy Friday the 13th!! Let’s get spooky.
Dear NOM Diary,
A cup of coffee + coconut milk (with a splash of sugar-free caramel syrup)
- Quick Oats (1 searching) + PB2 (1 serving) + Banana (1) + Blackberries (15) Cinnamon + Vanilla Extract
(Fast broken at 12:00 A.M.)
It kills me (KILLS ME) not to use leftovers, and salads only last as leftovers for so long, SO, I took one for the team and finished the 2/3 of my salad from yesterday that I didn’t finish. TO BE FAIR: I took it dressing and crouton -less, so even though it wasn’t the healthiest of options, it really just came down to mixed greens, red onion, olives, cherry tomatoes, diced grilled chicken, and mozzarella pearls, so not the worst.
(Isn’t it painfully clear that I’m trying to justify this decision? Sigh.)
Because I have such a hard time hitting my protein goal for the day (double sigh), I decided to add to my salad by soft boiling two eggs and dicing them on top. I love eggs. Could eat a dozen a day. Mmmm. The yolk made for a nice dressing replacement. Goodness I love runny yolks. Also tossed in a serving of nutritional yeast (moar protein)!

- Sweet Potato Cinnamon Raisin Toast
(This has been on my radar for some time now, and with my father-in-law coming to visit, what better time to make a sweet treat that I don’t have to feel responsible for finishing? Also: it’s GOOD for you. Bonus!)
Taste Test: It was amazeballz. I used half the raisins and truvia instead of sugar–bomb. I will absolutely be making these again. 20 servings, 70 calories each. It’s basically perfection.

Also, on my radar, I will be making this Sweet Potato Apple Breakfast Bake soon. SOON. My body is ready. Sweet potatoes FTW.
I’m calling today’s theme CINNAMON. Used in all sweet today, but it’s a great savory, too.
Days like today feel like a reset. Especially after yesterday’s alcoholic beverage overload, it’s nice to return to simple ingredients and clean meals.
